Making Bhaji

  1. Prep the Vegetables

    Wash, peel, and finely chop all the vegetables — onions, tomatoes, potatoes, capsicum, green peas. You can also boil potatoes beforehand to save cooking time.

  2. Cook the Masala

    Heat 1 tbsp oil in a pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Add ginger-garlic paste, cook for 1 minute, then add tomatoes and cook until soft. Add turmeric, red chili powder, and pav bhaji masala.

  3. Add Vegetables and Mash

    Add boiled vegetables to the masala mixture. Mix well and mash using a potato masher. Add some water and cook for 5-7 minutes on medium flame. Adjust salt and spice.

  4. Toast the Pav

    Slice pav buns. On a hot tawa, melt some butter and lightly toast both sides of the pav till golden brown.

  5. Garnish and Serve

    Serve hot bhaji with toasted pav, chopped onions, coriander leaves, and lemon wedges on the side. Add a small cube of butter on top for extra flavor.
